cheap and easy


when i was growing up, whenever the aunts would come over for a get-together, my mom would whip up a batch of reubens. if my memory serves me correctly, they were swiss cheese mixed with yellow mustard, saurkraut and some kind of meat, i think it was chipped beef or pastrami or something. on a 2-4 bite sized rye bread and popped into the oven til hot and gooey and a little browned on top.

on our honeymoon, we went to the chicago diner and i had their reuben sandwich. it was good, but not what i remember growing up with. so i attempted to make my own. i remembered the uncheese's grilled cheez filling was similar to what i remembered the reuben's cheesiness to be. so that's where i start.
