Baby vegan!

I became Vegan about a month ago after being a vegetarian on and off for the past few years.

I would love some advice, tips, or good restaurant suggestions!! (I live in Manhattan)

Thanksgiving was hard but I made it through and passed on the cheese cake!

Dog-friendly Church

I'm not traditionally religious myself, but I think this story on NPR is interesting... a church has begun welcoming dogs at their services. I think this is a positive thing-- openly validating the connection between humans & their other-species family members, and recognizing other species (not just the dang humans!) as important living things... even if it *is* perhaps just a shameless ploy to get butts in the pews, I kinda feel good about the message it conveys...

Bundt cake beginner -- adapting recipes?

I just got my first bundt pan, and sadly it's not the standard 10 cup pan, it's a 9 cup pan. Of course, I didn't know this wasn't the normal size when I bought it. :/ I normally use a chocolate cake ("wacky/crazy" cake) recipe that uses a 9 x 13 pan, and from looking at a conversion chart, a 10 cup bundt can be subbed for a 9 x 13 pan.... so if I leave a little batter out, will it cook normally in a 9 cup bundt, or do recipes have to be further adjusted to cook properly? I'm nervous it'll be all soft in the middle! If it matters, it's a silicone pan. Thanks for any advice!

Dill Potato Salad

Dill Potato Salad

Ingredients (use vegan versions):

    5 red potatoes
    1 tablespoon vegan mayonnaise (I use Vegenaise)
    1 teaspoon prepared Dijon mustard
    1 tablespoon dried dillweed (the leaves, not the seeds)
    sea salt, to taste
    pepper, to taste

Directions:

 1. Bring a pot with water to a boil over high heat.  Add red potatoes and boil until tender, 25 to 30 minutes (I like to leave the skin on, if you like this as well try not to over boil).  Let cool. Dice potatoes into small chunks or squares.

2. In a large mixing bowl, add vegan mayonnaise. Stir in mustard. (Mustard gives it a tangy flavor; try not to add too much unless ...

Italian Food Menu Ideas

Instead of Christmas dinner, my family is doing Christmas Eve dinner this year.  I've suggested Italian.

Ideas I have so far:

Appetizers:
kale chips
l2a's spin art (even if it's not Italian, per se)

Dinner:
traditional lasagna - for them
shiitake apple risotto - for them and me
green salad
frozen fruit drink (I can't find Italian fruit recipes)

Dessert:
chocolate espresso torte

Dinner would just be lasagna and salad.  I need something more for the table that's not starchy.  I was thinking maybe spaghetti squash, but I don't know which recipe to use.  What else could we serve that's a vegetable or fruit?  I'm staying away from bread because the lasagna and risotto are both grain-based.

eta:  I just thought of green beans, but I'd need a recipe I can make ahead.

Note about my mom:  She doesn't like garlic or onion (she'll tolerate a little) and she doesn't like the smell of food being cooked inside, so if I made a "serve immediately" dish, I'd have to be outside in the freezing cold.  Since 75 F is getting chilly for me, that option is out.

Delicious Avocado Sandwich

Ingredients (use vegan versions):

    vegan margarine (I use Earth Balance)
    4 slices sourdough bread
    vegan mayonnaise (I use Vegenaise)
    minced garlic, to taste
    1 avocado, sliced
    salt, to taste
    pepper, to taste (I use garlic pepper)

Directions:

1. Spread butter one one side of each piece of bread. Spread a thin layer of veganaise on the opposite side of bread.

2. Spread out the minced garlic on two slices of bread. Layer avocado on top of the bread with the garlic. Sprinkle salt and pepper over the avocado.

3. Top with the other piece of bread, butter side up.

4. Grill both sides until brown....

Curried Pumpkin Bisque

Ingredients (use vegan versions):

    2 tablespoons vegan margarine (I use Earth Balance)
    3 tablespoons unbleached all-purpose flour
    2 tablespoons curry powder
    4 cups vegetable broth
    3-1/2 cups roasted pumpkin puree
    1 (12-ounce) package silken soft tofu
    1/2 cup non-dairy milk (I use soymilk)
    2 tablespoons tahini
    1 tablespoon sucanat (sucanat - sugar cane natural - is minimally processed cane sugar)
    salt, to taste
    pepper, to taste
    roasted pumpkin seeds (optional)

Hello! I've just started transitioning to a vegetarian diet (lacto-vegetarian) and was so excited to find this website! I've been a meat-eater my whole life, but have been thinking about going vegetarian for a while. I took a trip to visit some family in west Texas recently and after seeing the feed-lots full of cattle I can't stomach meat anymore. I was horrified!  I am still including dairy in my diet for now, but I'm probably going to phase that out, too. I pick only organic dairy from grain fed cows, but since I can't tour every farm, I don't necessarily trust it. I just thought it would be best for me to do this in stages rather than go cold turkey. It actually hasn't been that hard of a transition, but I do miss fish. Any suggestions on that one? Thanks!!

Chocolate Chip Cookie Pillows

Ingredients (use vegan versions):

    1/2 cup margarine
    1/2 cup vegan shortening
    1-1/2 cups granulated sugar
    1 teaspoon vanilla
    2 egg equivalents, prepared
    1/2 teaspoon baking soda
    1/4 teaspoon salt
    2-1/2 cups flour  (I use 1/2 cup soy flour, 1 cup spelt flour, 1 cup brown rice flour)
    1-1/2 cups chocolate chips
    1 cup chopped walnuts

Directions:

These cookies are a little chewy and poofy, but still have a bit of crunch to them.

Vegan Potluck in NYC

I'm organizing a vegan potluck!   The location is TBD, and I'm considering a date between Dec 15 and 22nd or after the New Year.

Everyone will be bringing a vegan dish that can satiate 2 - 3 people!

We're also looking for someone who can host. 

Let me know if you're interested in attending!  Some people from Couchsurfing will also be joining.  I predict an attendance of around 20 people.

If you are willing to host, I promise to come early and stay late to help clean!  Also, we will be asking a person to bring all utensils, napkins, and plates in lieu of a dish, and set the event as BYOB.

I am new to the site and vegan lifestyle. I am so excited to have come across the site and can not wait to get started making some awesome goodies. I have seen a couple of post about others running into the same problems as myself. I honestly could care less if anyone agrees with what I chose to eat or not. However, I am married and I have two children. My husband believes vegtables are of the worst punishment on the plant. Well my children who once would eat anything are now taking on his eating habits. I am the one who makes all meals and decide what we are eating, but they just push it to the side like he does. This has been a topic of discussion for as long as I can remember in regards to eating healthy and now vegan. I would LOVE any suggestions.

Easy 'n Fat Free Rice Cooker Tumeric Rice

Ingredients (use vegan versions):

    3 cups brown rice
    water
    2 teaspoons turmeric
    1 cup raisins
    1/2 (15-ounce) can garbanzo beans or 1 cup pre-cooked garbanzo beans

Directions:

1. Add brown rice to a rice cooker.

2. Fill rice cooker with water to the 4 cup mark for al dente, plus a little more water for the raisins to absorb. (Also, add a little more water if you like soft sticky rice.)

3. Stir in turmeric, followed by raisins and garbanzo beans. 

4.  Cook according to rice cooker instructions.

Spinach & Cauliflower Pasta

Ingredients (use vegan versions):

    1 head garlic
    2 teaspoons + 2 tablespoons olive oil
    1 medium head of broccoli, florets only
    1 medium head of cauliflower, florets only
    1 (16-ounce) bag pasta, cooked (farfalle/bowtie is best, rotini also works well)
    sea salt, to taste
    vegan feta cheese (Sunergia brand is vegan or make your own)

I loooove this stuff. I have a lot of trouble with "natural" beauty products (shampoo, lotions, face wash.....I'm never satisfied), but this stuff is the bomb! It's very gentle,  not heavily scented and completely vegan. I like Dr. Bronner's, but this is MUCH cheaper. Less than $1.00 per bar at my local supermarket.

It can be hard to find, but you can order it online as well.

fried plantain sauces

My Honduran student brought some fried plantain to a class party, served with a sauce of mayonnaise mixed with ketchup.  I tried it, and it was very good, but I'd like to veganize it to make at home.  Is there a vegan mayo that tastes like plain, unseasoned mayonnaise?  I don't think Nayonnaise would be quite right. 

Or, does anyone else make fried plantains with a different sauce?  A Costa Rican student said in his country they use chile rellenos.  I've never tried it before.

Ideas, anyone?

FLEAS!?!?!

My cats have a HORRIBLE flea problem.. They are indoor only so i guess they keep getting them from the one cat that keeps escaping.  We have gone through 3 months of frontline plus and my poor babies are still covered in scabs and fleas and I am covered in bites on my feet as well  Cry

I am allergic to the stuff you sprinkle on the carpets, and I'm going to talk to the vet about Advantage as soon as they can have another dose. is there ANYTHING else I can do???
