L #2- lentil soup

S- brown basmati rice

D- teriyaki tempeh and broccolini

(I think I may be allergic to oats... Is that weird? I just got off a detox diet during which all I consumed was veggies and herbs. During this period my sinus allergies DISAPPEARED. Well I've begun incorporating grains and nuts and fruits back into my diet. Twice yesterday my allergies flared up really bad! It was alarming and made me consider the oatmeal as an allergen. It's the only thing I can think of... Any thoughts?)

Recipe help!

So, I always hear Americans taking about all these weird and wonderful creations like tofurky and amazing sounding stuff like that!
It's never been available in the UK, so I just ignored it and stopped drooling over the idea.

I have, however, found a couple of sites that are starting to do a wider range of veggie things now.

I have finally found tempeh, which I had never found before, and so I've never cooked with it.

I mostly cook with Quorn, and sometimes tofu.

So first off; how do I cook with tempeh? And any great recipes with it that are different to Quorn/tofu?

Secondly, they have veggie chorizo pieces!
OMG!
Any good recipes for that?
They also have proper 'turkey' and 'beef' roasts.
Wow!
I'll try them as they are first off, with the usual roast potatoes and veg, but any ideas for making them nicer?
I use the Quorn chicken style roast, and I like smothering it in garlicy herby butter, and stuffing it with the same. That comes out lovely.
I could do that with turkey I guess, but not beef.
I WILL try a stilton sauce with the beef, as that just sounds gorgeous.
Ooh and people have peppercorn sauces with beef?

What other turkey and beef roast recipes has anyone got?

There's steaks too... never done a steak!!

Sorry for the total vagueness, but I've never cooked with any of this stuff, it's all totally new, and I'd just love a whole bunch of ways to cook with them that are all yummy!

today:
Breakfast: pumpkin granola, and ginger almond and cashew granola, with freeze dried blueberries and soymilk.

2 cups of coffee with soymilk but I'm cutting down on caffeine effective immediately.

Lunchish: two slices of whole grain bread, toasted, one with hummus and tomatoes and salt and black pepper , the other with almond butter and sliced apples and cinnamon.

a grande ginger twist tea w/ 2 sugar in the raw, a small bite of a vegan chocolate chip cookie.

Dinner? one cup of trader joe's garden veggie soup, with a generous amount of chana masala spice, and one small clementine.

I dunno if that's enough food, but I have gained 15 pounds since August and I wouldn't mind dropping a little of that.

- green juice

Snack:
- orange-cranberry-nut bread Cliff bar
- small pack of Skittles

Dinner:
- portobello mushroom sandwich w/ mixed veggie brushetta on a wheat bun

Snacks:
- sweet potato chips w/ red pepper hummus
- pretzels w/ white choc pb
- green tea

Brunch- Oatmeal and a decaf Americano @ Starbucks.

Lunch- Kale soup and sauteed tempheh.

Linner- Brown basmati rice and steamed kale.

Dinner- Leftover lentil soup and a super yummy salad.



(I think I may have some oatmeal in a few minutes...)

Country Fried Vegan-ness

I made a country style Sunday dinner.  Country fried seitan, mashed potatoes, biscuits, collard greens and white gravy.  It was divine.  I took my seitan recipe from here and here.

my seitan ingredients ended up looking like this:

1 1/4 cup vital wheat gluten
1-2 tablespoons nutritional yeast
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon poultry seasoning
4-5 tablespoons chopped parsley
3/4 cup no chicken broth
squirt or two of reduced sodium soy sauce (maybe 1/8 cup?)

I simmered it in a mixture of no chicken broth, thyme, rosemary, sage and a small bit of cayenne pepper.  From there on I pretty much followed the Austin blog's directions- dredge in flour, then unsweetened soy milk/ener-g mix (left out the soy sauce/braggs and made mine really thick and batter like) and then seasoned cracker crumbs (I seasoned mine with Mrs. Dash). 

So, so, SO good.  And the leftovers make awesome chik'n biscuits.  Take that, Chik-Fil-A!!!

Interesting and Unique Recipes

 I can't imagine that I am the only one feeling like this but I have gotten really sick of the same old recipes lately. It seems like I eat the same food every week. I'm wondering if anyone has any recipes (cooking, not baking) that are different and/or use uncommon ingredients/veggies/milk alternatives, etc... And to complicate the matter more, I really don't like to eat anything processed that much. Milk alternatives and tofu/tempeh I'm alright with but other than that I would like to keep the food as pure as possible. I especially like earthy flavors. Can anyone help?

The Perfect Hummus Recipe?

Hello, all!

My approach to hummus has always been somewhat... un-exact. I tend to take some random quantity of chickpeas, throw things at them (tahini, lemon juice, you know the drill) and blend. Sometimes I end up with great hummus. Sometimes the hummus is, you know, just hummus. Once it was awful (too much salt) but that's pretty rare. But I can never reproduce greatness, because I never measure!

In the past monthish I've been searching for The Perfect Hummus Recipe. Partly for myself, and partly so that when other people ask me how to make hummus I can be less vague... I haven't found it yet. I went through the tags here, and have tried several of the recipes I happened upon. Good! But not Perfect.

Does anyone out there have an amazing hummus recipe that they haven't posted (or that I might have missed)?

well, christmas is coming up and my family always ask me what i want and i never really know what to say because i hate gift cards and i basically dont really ever want anything lol, so i am thinking about telling them i just want some vegeterian cook books.

So, does anybody have any suggestions on really good, but not that expensive cook books?

also, did anybody check out that new alicia silverstone cook book? i saw her on a show and it looked like it could have some good recipes.

One successful discovery is that you can make a lovely thick sauce out of bullion and potato starch. It adds a very sturdy flavor to most things. Roswell is in favor of it.

I attend a game every week with my friends and have ALWAYS brought goodies for everybody (totaling six people). I guess part of my love for it is the smug feeling of victory when they eat it and say it's too good, it couldn't possibly be vegan (HA!).

I've been thrown a curve-ball, though. One of the girls found out she's allergic to gluten. While I make something twice a year for my gluten intolerant aunt, I'm definitely not prepared for an every week goodie.

Do any of you have recipes for group treats that you've liked? Also, are there any flour mixtures that you use for a cupcake base - or is it a case-by-case basis? The more creative, the better! Thank you all, in advance.

Sauce, please!

I'm making some whole wheat pumpkin ravioli soon but am clueless about what sauce should accompany it. I'd like to make it myself but am open to suggestions for store-bought sauces that are available in the Chicago area.

It doesn't need to be super cheap, just not crazy expensive. I saw a pasta sauce recipe that called for black truffle oil, for example, and another that called for saffron. If a single ingredient costs more than $10, the recipe is not for me! I'm not picky and enjoy thick or thin, chunky or creamy, sweet or savory. I just really have no idea what to serve this pasta with since I have seen it mostly with mascarpone sauces.

Thanks in advance to anybody with a good idea. : )
