using up stuff i have too much of.

i have 10 cans of diced pineapple that expire in february, so i'll be trying to use those up in interesting ways.

today i made the ancho lentil stew with grilled pineapple from v'con. (with a bunch of short cuts and lazinesses thrown in.)

didn't have whole ancho so i used ground (2 tbsp), and since i wasn't toasting the ancho, i used ground cumin instead of whole (1.5 tbsp) and since i wasn't going to be putting whole spices in a grinder, i then used 1 tsp of ground coriander. heh. it did save time, so no complaints here.

i used de puy lentils and grilled my diced pineapple in my toaster oven. (it needed at least 15 minutes, so i don't know if it was more energy efficient than broiling it in the big oven. maybe.)

anyway, it was very tasty. highly recommended. (i think this is one of the recipes i had wanted to make back when testing, but i was to lazy to find whole anchos. hahaha! i'm a jerk.)


so. 9 cans left. maybe i'll try to make some sort of pineapple bread pudding. but the eggs really were a huge part of the recipe. we'll see.

Cool! Bring whatever side dishes you want, too! You can never have too many side dishes!

Shawn really wants a pecan pie, so if you can figure how to make one (I've never made or eaten a pecan pie), he would love you forever. If not, I'll just buy him a grocery store one since he's not vegan. Let me know what you'll bring since I'm going grocery shopping tonight. :)

What time do you want to come? We usually eat pretty early... like 1pm?

Let me know if you need directions. I will pick up ice cream (for with pie?) and hopefully soy whip, too! I also have to clean my house. ;) I wish we could invite Sadie, but I can't think of a good place she could safely stay. :(

i'm hoping to experiment with homemade whipped cream (from coconut) but it's a good thing if you pick some up. in case my experiment fails miserably. :-D

oh, and don't worry about sadie. she'll be fine at home. i don't know what time my mom's going to be having dinner/dessert, so we might have to start dinner later depending on stuff. i don't want to leave her for more than 9 hours. (10 at the very least) and if we're leaving our house at noon for your house, that means we'll have to leave my parents' house by 8. so hopefully they'll eat dinner by 5. that way we'd be able to spend 2 hours with them. (i hope that's not too confusing)
